The name Dirty Fish comes from our signature dish, the Salt-Grilled Sea Bass. Inspired by the traditional Thai method of grilling fish over charcoal, we wanted to create a dish that was both rustic and refined—a dish that would capture the essence of the sea and the soul of Thai cooking.
